Roasted Chorizo Sausage & Onions

This is one of my favorite ways to make a quick and easy dinner (or breakfast) in a pinch. If you’ve got a package of sausage (my favorite is spicy chorizo or sweet Italian sausage) and one large white or yellow onion on hand, you’re set. I made this batch of sausage and onions to go with some eggs and arepas de maíz (corn arepas) for breakfast one morning. And the best part about it? It can all be done in a cast iron skillet or roasting dish. Easy, mostly hands-free cooking? Sign me up.

Roasted Chorizo Sausage & Onions

Serves: 4

Cook time: 30 minutes

1 package chorizo sausage (or any linked sausage you like)

1 large white or yellow onion, thinly sliced

Kosher salt

Black pepper

Preheat oven to 400ºF.

In a cast iron skillet over medium-high heat, sear each side of the sausage for about 4 minutes, to make sure it’s browned and crisp. Then turn the heat off and add the sliced onions, arranging and making sure they nestle onto the sides of the seared sausage. Sprinkle with kosher salt and black pepper.

Roast in the oven for 20 minutes or until juices of the sausage run clear. When cool enough to handle, slice on a bias and serve with some onions along with your favorite side dish. Roasted cabbage wedges or sautéed green beans would be a great pairing for dinner that can also be roasted in the oven at the same time. This batch went with some fried eggs and corn arepas for breakfast.
