Papaya consumes both its pulp and its dry seeds. The ripe fruits are generally taken as fresh fruit, sliced, with sugar and lime juice or in fruit salads. Green papayas are consumed as cooked fruit. They also make various products such as jams, soft drinks, ice cream and jellies, in addition to making canned goods with it.

It is a product with a low caloric intake that barely provides protein and fat. It is rich in vitamins A, C and potassium. It also contains papain, an enzyme that degrades proteins and makes it a very digestive fruit.

There are many varieties of papaya, which can be included in different varietal types, such as 'Cuban', 'Paraguanero', etc. Some commercial varieties are 'Solo', 'Betty' and 'Puna'.

Because papaya is a plant that reproduces by seeds, multiple varieties have been obtained. Different types of varieties can be distinguished according to their agronomic characteristics.

Cuban: the fruits of this type are globose or oblong, 30-35cm long and 20-25cm wide. They can weigh up to 3-4kg, with thick, consistent pulp, with an intense orange color and a sweet taste.

Paraguanero: these fruits are elongated and cylindrical, 26cm long and 14 wide. The weight ranges between 2.5 and 3.5kg. The pulp is orange.

Cartagena: the fruits are cylindrical about 40cm long and 12-20cm wide. They weigh between 3.5 and 5kg. The bark is light green and the pulp is pale orange, with a sweet flavor.

Red: this type forms globose fruits, 20-25cm long by 12-19cm wide. The weight ranges between 1.2 and 2kg. The pulp is red and sweet tasting, with few seeds.

Hawaiian: the fruits are spherical and small, weighing 200 to 250g. The pulp is pale orange and not very sweet.

Some commercial varieties of papaya are 'Solo', 'Bluestem', 'Graham', 'Betty', 'Fairchild', 'Rissimee', 'Puna' and 'Hortusgred'.

There is also a kind of papaya called papayuela or wild papaya (Carica goudotiana) about 10cm in length that is used in the manufacture of syrup.
