Step 1 - Preparing the Potatoes:

  • Peel the potatoes and place them in water to prevent discoloration. Cut them into quarter-inch slices removing any rounded sides to make them straight on all edges. Save the extras for another dish if desired.

  • Ensuring uniform size as much as possible cut them into matchstick-sized strips (julienne) about 1/4 inch (0.6 cm) wide.

  • Rinse the fries in cold water to remove excess starch then soak in ice water for at least an hour and a half.

  • Take the cut potatoes out of the ice water and place on a cookie sheet lined with a paper towel to soak up the water.  Store the potatoes in the refrigerator for an hour and a half to firm up.
